---------- Recipe via Meal-Master (tm) v8.05 Title: Cheese Biscotti Categories: Snacks, Biscotti Yield: 20 Servings 1/2 c Unsalted butter; softened 1 tb Sugar 2 lg Eggs 1 c Sharp cheddar cheese; shred 2-1/4 c All-purpose flour 1-1/2 ts Baking powder 1/2 ts Salt 1/4 ts Ground red pepper Heat oven to 325°. In large bowl with electric mixer at medium speed, beat butter, sugar and eggs and cheese until well mixed. Reduce mixer speed to low. Gradually beat in 1 cup flour, the baking powder, salt and red pepper. Beat in enough of the remaining flour until a soft dough forms. With a wooden spoon, stir in more flour until a stiff dough forms. Divide dough in half and place both halves about 3" apart on a lightly greased baking sheet. Shape each into a 9 1/2" log, about 1" high and 2" wide. Bake 30 minutes or until firm and olden brown. Remove logs from oven and reduce temperature to 300°. Transfer logs to a cutting board. While they are still warm, using a serrated knife, carefully cut each log diagonally into 1/2" thick slices. Arrange slices, cut sides down, on the baking sheet and bake 15-20 minutes or until slices are dried but not browned, turning over each slice once. Cool and store in airtight container. -----
