MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Best Split Pea Soup Categories: Soups, Vegetarian Yield: 6 Servings MMMMM----------------------------BASE--------------------------------- 3 c Dry green split peas 5 c Water 1 Bay leaf 2 ts Salt MMMMM--------------------------VEGGIES------------------------------- 2 c Carrots; sliced 1 c Onion; minced 1 c Celery; minced 1 sm Potato; thinly sliced 3 Cloves garlic; crushed 2 tb Oil MMMMM-------------------------SEASONING------------------------------ 1/4 c Dry red wine 1/4 ts Dry mustard 1/4 ts Thyme A few drops sesame oil MMMMM--------------------------GARNISH------------------------------- 3 tb Vinegar 1 c Tomatoes; chopped 1/4 c Fresh parsley; chopped Start this recipe early in the day--it needs to simmer a long time. Simmer the base ingredients, covered, for 3-4 hours. Remove bay leaf. Sauté the veggies. If necessary, add a little water to steam. When tender, add to soup. Continue simmering.
