Journal of the Pandemic Year, Day hell-if-I-know (math is hard) Not much going on. Getting warmer, but didn't go outside. Made cookies that were good enough to share the recipe, which is the primary reason for this entry. They're called "German Chocolate Cookies", and the recipe comes from the Boston Cooking School Cook Book, revised editions of which are known as the Fannie Farmer cookbook. Add 1 cup dark brown sugar to two beaten eggs and beat well. Add 6 tablespoons unsweetened cocoa powder, 1/4 teaspoon cinnamon, 1/2 teaspoon salt, 1 teaspoon baking powder, the grated rind of half a lemon, beat well. Add 1 cup flour, mix, and add 1-1/3 or so cups of chopped nuts. Drop spoonfuls on cookie sheet, bake at 325F for 15min. Makes around 20. The original calls for 2 ounces of grated chocolate, but I only had cocoa, and it turned out fine. They wind up being slightly sweet, rather lemony, with a nice but not overpowering hint of chocolate. Definitely recommended. I have no idea why they're "German", but they're a nice, fairly thrifty cookie (no butter!) that're easy and anyone can make. You don't need to cream any butter or shortening, you don't need a mixer... just some pretty common baking ingredients, in fairly modest amounts. That's all I've got to offer today, I think.
